Ingredients
3 – 6 Slices Of Bacon
1 Onion – Diced
1 Cup grated pumpkin
2 Large Grated Zucchinis
1 cup chopped cauliflower
Any other veggies grated/ chopped small
1 cup almond meal
1/2 cup coconut flour
1 table spoon chia seeds
5 eggs
Pepper and or dried herbs
Method:
– Put oven to 200 c
– Grate Zucchini (Then wring out extra moisture)
-Grate & Chop small other Veggies
– Add eggs & dry ingredients & mix together
– Add more flour if too wet
– Put into greased pie/quiche dish & cook on 180 C for 50 minutes
– Let sit for an hour or so before you eat
– Serve with spinach/ rocket & Avocado on top.
